Undine's Wild Rice Stuffing

I recently got a request for my recipe for wild rice stuffing. I've been making it for special occasions for most of my married life - and that's a long time! I started making for our New Year's Day dinner which, early in our marriage, was pretty much the only holiday that Mariner and I were allowed to have as strictly ours: we had too much extended family in the vicinity, and none of them felt like we deserved any private holiday time together!
There isn't really any magic involved in making the stuffing. The main ingredient - Uncle Ben's Long Grain and Wild Rice Original Recipe® - is prepared mostly according to the directions on the package (reproduced as modified below) . I have since used other brands, with mixed success, and on rare occasions, mixed my own long grain rice with pure wild rice. The mixes usually come in standard six ounce (170g) boxes, and the recipe below is for preparing 1 box.
Suggested Equipment:
- Sauce pan, 1½ to 2 quarts nominal, with lid
- Common kitchen measures and tools
Ingredients:

| 4 | oz | Mushrooms, canned or sautéed | |
| 1/4 | cup | Bell pepper,variegated, diced | |
| 1/4 | cup | Onion, sweet red, diced | |
| 1/4 | cup | Celery, finely diced | |
| to | taste | Stir-fry vegetable mix, diced (for color)2 | |
| 2 | cup3 | Water or broth4 |
Directions:
- Combine the seasonings (or the contents of the seasoning packet), vegetables, and water or broth in the saucepan and stir well.
- Bring to a full boil while continuing to stir frequently.
- Add the rice mix to the saucepan and return to a boil.
- Reduce heat (medium-low to medium) and simmer covered 20 minutes, or until the liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff with a fork and and use as a stove-top dressing, or as stuffing for a bird,.
As I said, I started making this as part of a private New Year's Day dinner for Mariner and me. The rest of the meal was a roasted duck - my first! The meal turned out well - i.e., we both enjoyed it! When the children came along, they shared our enjoyment; although we didn't have it quite as often - duck is expensive! Later on, the dressing became a staple at most of our holiday dinners.
Topped with gravy or loads of butter, it ain't health food, but once in a while, who cares? It's easy to make, and tastes good with a variety of main dishes. Go for it!
