Home-made Basil Pesto

An easy-to-make pesto!

Ingredients:

  1. If you divide the recipe, use 3 cloves of garlic per cup of packed fresh basil.

  2. You can use pine nuts instead.

4 cup Fresh basil, packed
12 cloves1 Garlic
½ to ¾ cup Walnuts2, chopped
1 cup Parmesan cheese, grated
1 cup Olive oil
to taste Salt

Directions:

  1. For best distribution, grind the walnuts and Parmesan cheese- especially if they are only coarsely chopped.
  2. Measure all components into a food processor and process until it "looks right".

Makes about 2 cups of pesto, and can easily be doubled or divided.

The amount of garlic to be used is negotiable. Personally, I don't think you can have too much garlic in pretty much anything.

If the final product seems too dry, add more olive oil.
