Mom's Chocolate Icing

To make Mom's chocolate icing, you'll need the following:
Suggested Equipment:
- Saucepan, 4 quart
- Common kitchen measures and tools
Ingredients:
1 | cup | Cocoa powder | |
3 | cup | Sugar, | White, granulated |
½ | tsp | Salt, | Common |
¼ | cup | Butter or margerine | |
1½ | cup | Milk, | Whole (4% butterfat) |
1 | tsp | Vanilla extract1 |
Directions:
Combine cocoa, sugar, and salt in a 4-quart saucepan and mix thoroughly, then add in the milk while stirring.
Stirring constantly, bring the mixture to a boil over medium heat. Turn down the heat, and maintain a boil without stirring, so mixture will not boil over.
Continue boiling until a small amount of mixture forms a soft ball when dropped into cold water, then remove it from heat, and add the butter (or margarine) and vanilla.
Allow the icing to cool slightly, then beat until it thickens.
Apply to cake layers while still warm.
On final cooling, this icing will develop a glaze, if allowed.
